High Vitamin A

The link between vitamin A and heart health is still a bit murky. We do know it is vital in the womb for establishing a blood supply to the heart, but we're still sorting out how, or if, vitamin A has a big impact on heart health in adults.

We do know vitamin A plays a big role in immunity, vision, and reproduction, and that a deficiency can have a profound effect on those functions. Recently, however, animal and in vitro studies show vitamin A may also play a role in the development of fat cells, lipoprotein metabolism, and energy allotment.

While studies sort out the possible link between vitamin A and heart health, we do know it's important to avoid deficiency by making sure you consume a variety of foods right in vitamin A or its precursors (beta-carotene, alpha-carotene, and beta-cryptoxanthin). Supplements are not recommended unless you have a documented deficiency (talk to your doctor if you think you do), because the vitamin can accumulate in the body to toxic levels.

This collection features heart healthy high vitamin A recipes that the whole family will love!
