Chia pudding is really easy to make, and requires no cooking, so this healthy strawberry dessert comes together quick. And since you can use either fresh or frozen strawberries, it works for any season!

Ingredients
We're using simple ingredients for our strawberry chia pudding. Make sure to choose an unsweetened milk or milk substitute, and 100% pure maple syrup.
- Unsweetened non-dairy milk
- Fresh or frozen strawberries
- Chia seeds
- 100% pure maple syrup
- Vanilla extract
- Unsweetened cocoa powder

Instructions
Blended chia pudding is one of the easiest desserts to make. Really. No cooking required even!
Add all the strawberry pudding ingredients to your blender.
Blend the strawberry pudding on high until it's nice and smooth.
Divide the strawberry pudding among 4 dessert glasses.
Rinse out the blender, and place all the ingredients for the chocolate pudding in it.
Blend the chocolate pudding on high until smooth.
Carefully top the strawberry pudding cups with the chocolate pudding. Refrigerate.
Hint: you may want to refrigerate the strawberry pudding for an hour or so before making the chocolate pudding. This way the strawberry pudding will be firmer, and it will be easier to pour on the chocolate pudding for two distinct layers.
Substitutions
Here are some excellent substitutions for this chia berry pudding.
- Milk - use any unsweetened dairy substitute, but you'll have better results with creamier ones like soymilk and cashew milk.
- Sweetener - try honey instead of maple syrup.
- Fruit - use blueberries, blackberries, or cherries.

Equipment
The most important equipment you need for this is a high speed blender. I recommend something like a Ninja Blender or a Vitamix.
Of course any blender will do. But you may not be able to blend all the chia seed smooth. Which is fine! Just know your pudding will turn out closer to tapioca consistency.
Storage
Store this chocolate strawberry pudding in the dessert cups, covered with plastic wrap in the refrigerator.
They will keep this way for about five days. Sometimes the pudding will sweat a little (most puddings do this), so just stir it a little before eating it.
Top tip
The most important thing for this recipe to turn out well is to make sure your strawberries are ripe. Even a little overripe is ok, as long as they aren't moldy. Underripe strawberries just won't give much flavor to the pudding. Choose frozen strawberries out of season.
FAQ
There is a lot of variation in both fresh and frozen strawberries with regard to water content. If your pudding isn't setting, it's probably because your strawberries were a little on the watery side.
To sidestep this issue, if your pudding seems watery in the blender, it probably won't set properly. Add another 1-2 teaspoon of chia seeds and re-blend. It should look like a thin smoothie.
Yes. If you don't want individual dessert cups - or maybe you don't have any - just layer the strawberry and chocolate puddings into a large glass bowl for serving.

- 10 oz Fresh or Frozen Strawberries, hulls removed and chopped (thawed if frozen)
- 3 tablespoon chia seeds
- 1 tablespoon 100% pure maple syrup
- 1 teaspoon vanilla extract
Chocolate Pudding

- 3 tablespoon chia seeds
- 3 tablespoon 100% pure maple syrup

Instructions
- Place all strawberry pudding ingredients in a high speed blender, and blend on high speed until smooth. Divide among 4 bowls.
- Rinse blender.
- Place all chocolate pudding ingredients in high speed blender, and blend on high speed until smooth. Pour in the bowls on top of the strawberry pudding.
- Cover and refrigerate until ready to serve, at least an hour.
