In this delightfully light dessert, we took a classic Valentine sweet, and packed nutrition into every part without sacrificing taste! What better way to show your one-and-only you care than protecting their health?

The strawberry layer of the pudding is bursting with strawberry flavor and is so light and fluffy you will want to keep eating it all day! The chocolate layer is the decadent contrast it needs; rich and creamy, and almost guilt-free!

And the best part? It’s super simple with a couple quick buzzes of your blender! A high speed blender (like Vitamix or Ninja) will work best, but if you don’t have one, you should still make this! You might just want to grind up the chia seeds first unless you don’t mind tapioca consistency. I love tapioca, but I was going for a smoother pudding this time. 🙂

Chocolate Covered Strawberry Chia Pudding

Ingredients

Strawberry Pudding

  • 1 cup milk of choice (I used unsweetened soy milk)
  • 1 1/2 cup (1.2 oz) freeze dried strawberries
  • 3 Tbsp chia seeds
  • 1 Tbsp 100% pure maple syrup
  • 1 tsp vanilla extract

Chocolate Pudding

  • 1/2 cup milk of choice (I used unsweetened soy milk)
  • 2 Tbsp cocoa powder
  • 1 1/2 Tbsp chia seeds
  • 1 1/2 Tbsp 100% pure maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Place all strawberry pudding ingredients in a high speed blender, and blend on high speed until smooth. If it seems too thick, add a little more milk. Divide among 2 or 3 bowls.

  2. Clean blender.

  3. Place all chocolate pudding ingredients in high speed blender, and blend on high speed until smooth. If it seems too thick, add a little more milk. Pour in the bowls on top of the strawberry pudding. You’ll probably have a little extra – you want only a little chocolate pudding so the flavor isn’t overwhelming.

  4. Devour immediately, or cover and refrigerate until ready to enjoy!
