Chocolate Strawberry Pudding

Dessert cup with strawberry and chocolate pudding in it.

We took the classic chocolate covered strawberry, and made it into a delightfully light and airy pudding!

Ingredients

Strawberry Pudding

1 cup Unsweetened soy milk (or your choice)
10 oz Fresh or Frozen Strawberries, hulls removed and chopped (thawed if frozen)
3 tablespoon chia seeds
1 tablespoon 100% pure maple syrup
1 teaspoon vanilla extract

Chocolate Pudding

1 cup Unsweetened soy milk) (or your choice)
¼ cup Unsweetened cocoa powder
3 tablespoon chia seeds
3 tablespoon 100% pure maple syrup
1 teaspoon vanilla extract

Instructions

Place all strawberry pudding ingredients in a high speed blender, and blend on high speed until smooth. Divide among 4 bowls.
Rinse blender.
Place all chocolate pudding ingredients in high speed blender, and blend on high speed until smooth. Pour in the bowls on top of the strawberry pudding.
Cover and refrigerate until ready to serve, at least an hour.

Notes

Note: If your pudding looks watery in the blender, it may not set up properly. Add another 1-2 teaspoons of chia seeds and blend it again until it resembles the consistency of a thin smoothie.
