Cinnamon Sweet Potato Fries
Cinnamon sweet potato fries are oven baked, crispy, and pair nicely with burgers and slaw. A finishing dusting of cinnamon means you don't even need ketchup!

Ingredients
- 1 Large Sweet Potato (about 1-1 ½ lbs)
- 2 tablespoon Corn Starch
- 3 tablespoon Olive Oil
- ½ tablespoon Cinnamon
Instructions
- Pre-heat oven to 400⁰ F.
- Wash and dry sweet potato. Slice julienne style (I leave the skin on) in ¼ inch thick sticks. A mandolin with a fry attachment will help you get really uniform fries!
- Toss sweet potato fries with corn starch.
- Toss with oil to coat. Arrange in a single layer on a baking pan. Make sure to leave space around each fry (2 baking sheets may be needed).
- Bake for 30 minutes, turning fries over halfway through.
- Toss with cinnamon after the fries are done baking. Serve immediately.
