Cinnamon sweet potato fries are oven baked, crispy, and pair nicely with burgers and slaw. A finishing dusting of cinnamon means you don't even need ketchup!

Ingredients
1LargeSweet Potato (about 1-1 ½ lbs)
2tablespoonCorn Starch
3tablespoonOlive Oil
½tablespoonCinnamon
Instructions
Pre-heat oven to 400⁰ F.
Wash and dry sweet potato. Slice julienne style (I leave the skin on) in ¼ inch thick sticks. A mandolin with a fry attachment will help you get really uniform fries!
Toss sweet potato fries with corn starch.
Toss with oil to coat. Arrange in a single layer on a baking pan. Make sure to leave space around each fry (2 baking sheets may be needed).
Bake for 30 minutes, turning fries over halfway through.
Toss with cinnamon after the fries are done baking. Serve immediately.
