  • 2 medium Zucchini, cubed
  • 1/2 cup Dates, pitted (I like Made In Nature brand!)
  • 1 cup Water
  • 1 can Reduced Fat Coconut Milk
  • 2 tsp Ground Cinnamon
  • 1 tsp Ground Cardamom
  • 1.5 tbsp Chia Seeds


  1. Put zucchini, dates, and water in a saucepan, and bring to boil.

  2. Reduce heat, and simmer until the zucchini is soft; about 10-15 minutes.

  3. Pour zucchini, dates, and water into a high speed blender with the coconut milk, cinnamon, and cardamom. Blend on high until smooth. Taste and adjust spices if needed.

  4. Add the chia seeds to the blender, and blend on high until smooth.

  5. Divide among 6 bowls (or pour into one big bowl). Cover and refrigerate at least 2 hours.
