Falafel Spiced Roasted Chickpeas

Crunchy, a little salty, and falafel-y! What's not to love?

Ingredients

  • 1 can (1 1/2 cups) chickpeas, drained and rinsed
  • 1 Tbsp fresh parsley, finely chopped
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Pinch cayenne pepper, to taste
  • Pinch salt, to taste (optional)

Instructions

  1. Preheat oven to 400 degrees.

  2. Combine all ingredients.

  3. Spread on a baking sheet lined with parchment paper.

  4. Bake for 30-45 minutes, depending on how crispy you like them.
